Hawaiian Tropical Smoothie Bowl
Hawaii's year-round tropical bounty — papaya, mango, banana, pineapple, and passion fruit — makes it the natural home of the smoothie bowl. More substantial than a drink, a smoothie bowl is blended thick so a spoon stands upright, then crowned with colorful toppings that make each bite different. It has become a breakfast staple at North Shore surf camps and Honolulu health cafés alike, and is a perfect way to celebrate the islands' extraordinary fruit.
Serves: 2
Ingredients
Smoothie Base
- 300g (10 oz / about 2 cups) frozen mango chunks
- 150g (5 oz / 1 cup) frozen pineapple chunks
- 1 medium ripe banana, sliced and frozen
- 120ml (½ cup) coconut milk (full-fat, from a can)
- 2 tbsp passion fruit pulp or lilikoi juice
Toppings
- ½ fresh mango, diced
- 6 fresh strawberries, halved
- ½ banana, sliced
- 60g (¼ cup) granola (gluten-free if preferred)
- 2 tbsp unsweetened shredded coconut, toasted
- 1 tbsp macadamia nuts, roughly chopped
- 1 tbsp honey or agave, for drizzling
- Edible flowers (optional)
Instructions
- Combine frozen mango, frozen pineapple, frozen banana, coconut milk, and passion fruit pulp in a high-powered blender.
- Blend on high, using the tamper to push fruit into the blades, until the mixture is thick and completely smooth — about 60–90 seconds. The consistency should be thicker than a drinkable smoothie; add a splash more coconut milk only if the blender stalls.
- Divide the thick smoothie between two bowls. Work quickly as it softens fast.
- Arrange toppings in sections over each bowl: fresh mango, strawberries, and banana slices on one side; granola, toasted coconut, and macadamia nuts on the other.
- Drizzle honey over the entire bowl. Add edible flowers for a beautiful finishing touch.
- Serve immediately.
Cook's Notes: The key to a thick smoothie bowl is using all frozen fruit and minimal liquid. Freeze the banana the night before peeling and slicing it. A Vitamix or other high-powered blender gives the smoothest, iciest result — regular blenders may struggle with the frozen fruit ratio.
