Mexican Agua Fresca Paletas (Fresh Fruit Ice Pops)

Paletas — Mexican ice pops made from fresh fruit, agua fresca, or creamy bases — are a cornerstone of Tex-Mex summer culture, sold from carts in San Antonio and Austin markets. These agua fresca versions capture watermelon, mango-chile, and hibiscus flavors in their purest form.

Instructions

  1. For watermelon paletas: blend watermelon, lime juice, sugar, and salt until smooth. Taste and adjust sweetness — watermelon sweetness varies. Pour into 4 paleta molds, insert sticks, and freeze at least 4–5 hours or overnight.
  2. For mango-chile paletas: blend mango, lime juice, sugar, salt, and half the Tajin until smooth. Pour into 4 paleta molds, sprinkle remaining Tajin over the top of each mold, insert sticks, and freeze.
  3. For hibiscus paletas: steep hibiscus flowers in hot water 10 minutes. Strain into a bowl, stir in sugar and lime juice until dissolved. Let cool completely. Pour into molds and freeze.
  4. To unmold: run the outside of the mold briefly under warm water for 5–10 seconds, then pull the stick gently to release.
  5. Serve immediately or wrap individually in plastic and store in the freezer up to 2 weeks.

Cook's Notes: If you don't have paleta molds, use paper cups with craft sticks — insert the stick through a foil cover to hold it upright. Adding 1–2 tbsp (15–30 ml) corn syrup to any base gives a creamier, less icy texture. Tajin on the mango paleta mimics the famous chamoy mango popsicle sold on Texas street corners.
