Cuba's tropical abundance — mangoes, pineapples, papayas, and star fruit — lends itself naturally to this bright, herb-lifted fruit salad that appears on Cuban breakfast tables and at the end of leisurely lunches. A dressing of fresh lime juice with a hint of honey and torn fresh mint transforms humble tropical fruit into something vivid and refreshing.   1. Combine the mango, pineapple, papaya, and star fruit (if using) in a large bowl.
  2. In a small bowl, whisk together the lime juice, lime zest, honey, and salt until the honey dissolves.
  3. Pour the dressing over the fruit and toss gently to coat every piece.
  4. Add the torn mint and basil leaves. Toss once more.
  5. Taste and adjust — more lime if it needs brightness, more honey if the fruit is very tart.
