Tikel Gomen

Tikel Gomen (ጥቅል ጎመን) is an essential Ethiopian side dish — cabbage, potatoes, and carrots slowly braised in turmeric, ginger, and onion until meltingly tender. It appears on almost every fasting (tsoom) platter and is one of the most widely eaten vegetable dishes in Ethiopia, prized for its gentle warmth and earthy sweetness.

  1. Heat the oil in a large, heavy pot over medium heat. Add the onion and cook, stirring occasionally, for 10–12 minutes until soft and translucent.
  2. Add the garlic and ginger, cook 2 minutes. Stir in the turmeric and cumin and cook 1 minute until fragrant.
  3. Add the carrots and potatoes and stir to coat with the spiced oil. Cook 3 minutes.
  4. Add the cabbage and the water. Stir everything together, bring to a gentle simmer, then reduce heat to low. Cover and braise for 20–25 minutes, stirring once halfway, until the vegetables are completely tender and the liquid has been absorbed.
  5. Season generously with salt and pepper. Adjust turmeric to taste.
  6. Serve warm with injera or flatbread, and sliced green chilli for heat.

Cook's Notes: This is a forgiving dish — the vegetables can braise longer without harm, developing deeper sweetness. It is a core component of the Ethiopian fasting platter (beyaynetu) and is also excellent cold the next day as a packed lunch.
