Tangia Marrakchia

Tangia is the bachelor's stew of Marrakesh — a slow-cooked lamb and preserved lemon dish whose very name refers to the clay amphora it is cooked in. Traditionally, spice merchants and unmarried men would load the urn with meat and spices, seal it with parchment, and leave it with the hammam furnace-keeper (the farnatchi) to cook all day in the embers beneath the bathhouse.

  1. In a large bowl, combine the lamb chunks with the preserved lemon rind, crushed garlic, cumin, turmeric, ginger, ras el hanout, salt, and olive oil. Mix well to coat every piece.
  2. Transfer everything to a heavy lidded pot or Dutch oven. Add the water and the herb bundle.
  3. Cover tightly and cook in one of two ways: in the oven at 150°C (300°F) for 3.5–4 hours, or in a slow cooker on low for 8-9 hours.
  4. The lamb should be completely falling off the bone and the sauce reduced and concentrated. Discard the herb bundle.
  5. Taste and adjust salt. Serve directly from the pot with Moroccan khobz bread or couscous to soak up the sauce.
  6. Garnish with freshly chopped parsley.

Cook's Notes: Do not add extra liquid — the lamb releases its own juices. The preserved lemon is non-negotiable; it gives the tangia its distinctive citrus-salt depth. This dish is even better the next day as the flavours meld further.
