Potaje de Lentejas Cubano

Potaje — thick, hearty bean or lentil stews — are the backbone of everyday Cuban home cooking, each household guarding its own version. Lentils are among the quickest to cook, making this potaje a weeknight staple. Spanish-style chorizo, cumin-heavy sofrito, and a finishing squeeze of bitter orange (naranja agria) give it the unmistakable character of the Cuban kitchen.

  1. Heat olive oil in a large heavy pot over medium heat. Fry chorizo 3–4 minutes until it renders its fat and turns slightly crisp. Remove with a slotted spoon and reserve.
  2. In the rendered chorizo fat, fry onion and green pepper 7–8 minutes until soft. Add garlic, cumin, smoked paprika, and oregano; cook 2 minutes.
  3. Add tomatoes and cook 5 minutes, stirring, until broken down to a thick paste.
  4. Add lentils, bay leaves, and stock. Bring to a boil, then reduce to a steady simmer. Cook 20 minutes.
  5. Add potatoes and the reserved chorizo. Continue cooking 15–20 minutes until lentils are completely tender and potatoes are soft. The stew should be thick — add a splash of water if it gets too dry.
  6. Discard bay leaves. Stir in the bitter orange juice and adjust salt and pepper. Ladle into bowls and finish with fresh parsley.

Cook's Notes: For a smokier depth, add ½ tsp chipotle powder with the spices. The potaje is even better the next day as the lentils continue to absorb the sofrito. Serve over white rice or with toasted Cuban bread — tearing it directly into the stew is encouraged.
