- 2 tbsp (30 ml) Shaoxing rice wine
- 1 tsp (5 g) sugar
- 4 slices fresh ginger
- 3 spring onions, tied in a knot
- 2 star anise
- Salt to taste
- 1 tbsp (15 ml) neutral oil
Instructions
- Blanch the ribs: place in cold water, bring to a boil, cook 3 minutes, then drain and rinse under cold water.
- Heat the oil in a large cast-iron pot or Dutch oven over medium-high heat. Add ribs and brown on all sides, about 6–8 minutes.
- Add ginger, spring onions, and star anise; stir for 30 seconds until fragrant.
- Pour in Shaoxing wine and let it sizzle for 30 seconds, then add soy sauce, dark soy sauce, sugar, mushrooms, and enough water plus strained mushroom liquid to cover.
- Bring to a boil, skim any foam, then reduce heat to a gentle simmer. Cover and cook 40 minutes.
- Add corn and potatoes. Continue simmering covered for 25–30 minutes until potatoes are fully tender and broth is deeply flavoured.
- Taste and adjust salt. Remove star anise and spring onion knot before serving straight from the pot with steamed rice.
