Lebanese Kibbeh Nayeh
Kibbeh nayeh is Lebanon's most celebratory raw dish — finely ground lamb mixed with bulgur wheat, onion, and the aromatic spice blend called baharat, served raw at room temperature with a drizzle of olive oil, mint leaves, and scallions. - 400g (14 oz) very fresh lean lamb leg or loin, all fat and sinew removed, twice-ground
- 100g (3.5 oz) fine bulgur wheat (grade #1)
- 1 small onion, quartered
- 1 tsp baharat spice blend (allspice, cinnamon, nutmeg, black pepper)
- ½ tsp ground cumin
- ½ tsp dried chili flakes (optional)
- Salt to taste
- Ice water as needed
To serve:
- 3 tbsp high-quality extra virgin olive oil
- Fresh mint leaves
- Thinly sliced scallions
- Sliced radishes
- Flatbread

- Soak bulgur in cold water for 10 minutes, then drain and squeeze completely dry in a clean cloth.
- Keep all ingredients ice-cold throughout. Place ground lamb, onion, baharat, cumin, chili flakes if using, and salt in a food processor. Pulse until the onion is fully incorporated and the mixture is uniform — about 30 seconds.
- Turn mixture onto a cold work surface or large bowl. Add drained bulgur. Knead with damp, cold hands for 5 minutes, adding ice water one tablespoon at a time to achieve a smooth, pliable, non-sticky texture.
- Taste a small piece for seasoning — yes, raw, as is traditional. Adjust salt and spices.
- Press kibbeh nayeh onto a large flat plate, spreading it to about 1 cm thickness. Use wetted fingers to make a crosshatch pattern on the surface.
- Drizzle generously with olive oil. Garnish with fresh mint, scallions, and radishes. Serve immediately with flatbread.
