  1. Warm a 10-inch skillet over medium heat and coat it with cooking spray.

  2. Place one wrap or tortilla in the skillet. Layer with 4 slices of provolone cheese.

  3. Add half of the sliced Andouille sausage, followed by half of the roasted red peppers, avocado slices, and grated carrots. Drizzle with half of the salsa.

  4. Top with another 4 slices of cheese and place another tortilla on top.

  5. Allow the bottom to cook until golden brown and heated through, about 4-5 minutes. Preheat your broiler during this time.

🔥 Keep a close eye on the quesadilla as the broiler can brown it quickly!
