π« The quality of chocolate makes a big difference in flavor, so choose a brand you love!
-
Flavor the ganache:
- For mint truffles, add the peppermint extract into the ganache and mix well.
- For almond truffles, stir in the almond extract and finely chopped almonds.
-
Chill the ganache:
- Cover the bowl with plastic wrap and refrigerate the ganache for about 2 hours, or until firm enough to scoop.
-
Form the truffles:
- Once firm, scoop out small amounts of ganache (about 1 inch) and roll them between your hands to form small balls.
- Roll the chocolate truffles in cocoa powder for the classic version, or use crushed mint leaves for mint truffles.
π± If you find the ganache too sticky to handle, let it chill for an additional 30 minutes.
-
Coat the almond truffles (optional):
- If desired, roll the almond truffles in finely chopped almonds for an extra crunch.
-
Set and serve:
- Place the truffles on a plate or in mini cupcake liners and refrigerate until ready to serve.
π¬ These truffles can be stored in an airtight container in the fridge for up to a week... if they last that long!
Variations
- Spicy: Add a pinch of cayenne pepper or chili powder to the ganache for a surprising kick! πΆοΈ
- White chocolate: Substitute dark chocolate for white chocolate for a sweeter truffle and adjust the cream accordingly.
