Coconut Cream Cake

  1. Preheat oven to 350°F.

  2. In a large bowl, mix together cake mix, water, eggs, coconut flavoring, and vegetable oil until well combined.

  3. Pour the batter into two greased 9x5 inch loaf pans.

  4. Bake for about 28 minutes or until a toothpick inserted in the center comes out clean.

  5. Let cakes cool in pan for 10 minutes then transfer to wire racks to finish cooling.

  6. In a large bowl, mix together sweetened condensed milk and cream of coconut until well combined.

  7. Cover the cooled cakes with the mixture from step 6, and top with whipped topping and shredded coconut.
